I just discovered this Trader Joe’s spatchcocked lemon rosemary chicken and immediately knew I needed to try it. You literally just take it out of the bag as is, place it in a baking dish, and bake for 60 to 75 minutes. Simple as that! I also added garlic powder to the chicken because you can’t have too much garlic and I figured a little extra flavor would be needed.

Although it was pretty good, I was definitely expecting a little bit more from the chicken. In my opinion, a rotisserie chicken is better and they are half the price. This was something different though, it felt a little fancy, and I enjoy trying new things! As always, I dipped the chicken in Frank’s Red Hot Sauce.

I paired the chicken with basil pesto ravioli and fresh figs. This was also my first time trying this brand ravioli and they were very good! A little drizzle of extra virgin olive oil is all you need on them. I will definitely be buying the basil pesto ones again and want to try the other flavors as well.
