What I Ate on Week 1 of Whole30

Week 1 of Whole30 is done and although it was hard, it was a success! Here is everything that I ate the first week. Cheers to week 2!

Pan-fried potatoes with an over easy egg.

Welp, we are in week 2 of my Whole30 challenge and I’m surviving (obviously).  Some days are definitely harder than others and props to anyone who has completed Whole30 before or anyone who eats this perfectly all the time, because it is NOT easy.  With that being said though, I feel absolutely amazing and am so proud that I am still going strong.  I just wanted to pop in and share my meals from the week 1 of my journey!

I am very proud of my choices and am feeling fantastic.  I know that plantain and Siete tortilla chips aren’t necessarily Whole30 approved because they are a processed item, however, when I do eat them it’s a small amount that I am fully in control of and the ingredients are compliant.  They help keep me sane lol.
