
Kabobs are one of my favorite meals and if you’ve been following me for a long time, this is no news to you. My cousin recently introduced me to a new marinade and I’ve been loving it lately. The marinade keeps the chicken so tender and adds delicious flavor to the vegetables and potatoes. All you need is avocado oil (or olive), coconut aminos (or soy sauce), jar minced garlic, honey, and salt and pepper. Super simple!
These kabobs had orange and yellow bell pepper, zucchini, onion, canned potatoes, and chicken breast. I accidentally purchased thin sliced chicken breast but it actually turned out better because the pieces were thinner so they soaked up more of the flavor. To infuse even more flavor I like to fork meat before marinating it. I also prefer to skewer the meat, veggies, and potatoes separately.
Once the chicken was about ready to come off of the grill, I brushed on BBQ sauce and cooked for a few more minutes.
Other good items for kabobs or just to grill up? Cabbage, summer squash, mushrooms, small pieces of corn on the cob, sweet potato, and pineapple! I know a lot of people do tomatoes too but I think warmed tomatoes are disgusting, lol.
For a refreshing side dish to go with the kabobs I tossed English cucumber slices with rice vinegar and stevia.
