Budget Friendly Lunch: Egg Salad Sandwich

This creamy egg salad is an easy and cost effective lunch that will last you multiple meals! Add a simple side for a complete plate!

I have been obsessed with egg salad over the last couple of weeks!  It’s a source of protein for me and it’s filling.  I like that I can make a big batch and eat it throughout the week and it’s easy on the bank account.

Egg Salad Ingredients: mashed hard boiled eggs, mayo, pink himalayan salt, black pepper, mustard, and rice vinegar.  I go pretty heavy on the mayo which makes it creamy and you only need a little splash of the rice vinegar for some acidity.  My grandma puts this in her deviled eggs and it is a complete game changer.

Half Dozen Organic, Cage Free Eggs: $2.49 (high end)

Sourdough Bread, 9 Slices: $3.00 (high end)

Mayo, Mustard, Salt, Pepper, and Rice Vinegar: Less than $1.00?  More than likely you already have these ingredients in your pantry and refrigerator and they last a long time!

Egg salad sandwiches are an easy meal to throw together and one sandwich breaks down to about $1.53 (what you use specifically will of course change this number), but that is a cheap meal if you ask me!  Add some frozen cooked vegetables or potato chips to complete the meal and keep it at a low cost.
